ONE RECIPE – 5 WAYS

Hi Everyone,

I decided that rather than giving you an ingredient this week, I would give you a recipe that you can do up in different ways, by either adding something to the recipe, or making it in a different way.  Most of the items you will have in your cupboards (pantry), but as usual at the end will be the grocery list for all of the items.  Oh and this week, I have not included the ingredient from last week, but there is a twist on the recipe that you could add the sun-dried tomatoes to, if you wish.

 

BAKING POWDER BISCUITS 

 

Baking Powder Biscuits

 

INGREDIENTS

  • 5  Cups Flour
  • 3  tsp Baking Powder
  • 1  tsp Salt
  • 2/3 Cup Butter, cold and grated
  • 1/2 – 3/4 Cup Milk
  • 1/4  Cup Butter, melted
  • 1  Tbsp Sugar

INSTRUCTIONS

  1. Preheat oven to 450 degrees F.
  2. Line two baking sheets with tin foil
  3. Sift together the Flour, Baking Soda & Salt
  4. Grate in the cold Butter, right into the bowl
  5. Add the Milk gradually until the dough forms a slightly sticky feel
  6. Roll dough into 3/4-inch-thick round
  7. Cut biscuits out with two-inch biscuit cutter
  8. Place each biscuit on the ungreased baking sheet
  9. Brush the tops with the melted butter and then sprinkle a little bit of sugar on top
  10. Bake for 13-15 minutes or until the tops are golden brown
  11. Let cool for 10 minutes then serve warm with butter and jam

 

 

BAKING POWDER BISCUITS – 2ND VARIATION

SCONES

 

BPB - Scones

 

  • In this variation reduce the heat to  425 degrees
  • Add two eggs
  • Add 1/2 Cup sugar
  • Pat into two 1/2-inch rounds
  • With a Pizza cutter, cut the dough into eight pieces
  • Again place them on the ungreased baking sheet lined with tin foil

You can add whatever you like to these scones, blueberries, cranberries and white chocolate, cheese, lemon zest, just stir in whatever you would like at the end very gently and then bake as above for  15 minutes or until the tops are golden brown.

My favourite is with well-drained crushed pineapple mixed into the batter and then the top is brushed with melted butter and brown sugar.   YUM

 

BAKING POWDER BISCUITS – 3RD VARIATION

EASY CINNAMON ROLLS

 

BPB - Cinnamon Rolls

 

I don’t know if you remember in Home Ec. class when we had to make Cinnamon Rolls, well these ones are just like them, no yeast or anything and they really aren’t fancy at all but boy are they good (just not for your waistline).

  • This time roll the dough out into a big square about 1/4-inch thick
  • Butter the dough all over except to within one inch of each side
  • Sprinkle with Cinnamon
  • Sprinkle with Brown Sugar, quite liberally
  • Begin rolling from one of the ends, then when you reach the other side, before you roll it all the way, along the one inch edge brush with melted butter and try to stick the dough together
  • You will have a long roll of dough, cut it in half, then in half again, and then in half again so that you have a piece that’s about 6 inches long.  Take each of the six-inch pieces cut them in half and then in half again and you will have your cinnamon buns about 1 1/2 inches high.
  • Place each of the buns on the ungreased baking sheet about two inches apart or into a round pan where they are all touching for softer sides.
  • Bake at 450 degrees for about 13-15 minutes
  • Let cool for 10 minutes
  • Then in a small bowl mix 1 1/2 Cups Icing Sugar and 1/2 tsp Lemon Juice together to make a thin icing
  • Drizzle it over the Cinnamon rolls
  • Let cool for two more minutes then serve

 

 

BAKING POWDER BISCUITS – 4TH VARIATION

FOCCACIA BREAD

 

BPB - Foccacia Bread

 

  • This one is so easy
  • Pat the dough into a round that is about an inch thick
  • Then place the dough on an ungreased baking sheet
  • Take your fingers are press dimples into the top of the dough
  • Brush the top with Olive Oil
  • Sprinkle with the herbs of your choice (dried or fresh): thyme & rosemary, basil and oregano, or any other combination that you like
  • Bake in the 450 degree oven for about 15 – 20  minutes, do the toothpick test on this one, because it will be quite thick.

Now you could vary this recipe too, this is where you could add chopped up sun-dried tomatoes, or feta cheese, or provolone cheese, or anything that strikes your fancy into the dough itself.  Just don’t forget to brush with olive oil before you sprinkle anything on top.

 

BAKING POWDER BISCUITS – 5TH VARIATION

STRAWBERRY SHORTCAKES

 

BPB - Strawberry Shortcake

 

  • Use the basic biscuit recipe but add 1/2 Cup sugar to it
  • Bake them as described in the basic recipe
  • Let them cool completely
  • Cut them in half and then fill them up with Macerated Strawberries and Whip Cream
  • To make them a little bit more fancy, you can macerate the berries in sugar and Balsamic Vinegar (not too much mind),  and sprinkle them with chopped mint, you won’t believe the flavour.  Oh, and we get to use another one of our previous ingredients Balsamic Vinegar.

  • Balsamic Vinegar
